The evolution of processed meat beyond traditional taste and preservation

While convenience and flavour remain the key purchase drivers, consumers are increasingly evaluating products based on their nutritional profile, in particular the protein and sodium content. For manufacturers, this means reformulation must enhance nutritional positioning without compromising texture, stability or sensory appeal.

High‑protein solutions that enhance nutrition without sacrificing texture

In high-protein processed meat formulations, texture challenges mainly arise from an overly dense protein network formed during heating, resulting in increased hardness. High-protein formulation is often associated with lower fat content, and its combination with an over-developed protein network can shift the product from firm and structured to tough and dry. This makes its texture undesirable for consumers.

Incorporating functional animal proteins from beef, chicken and pork and from dairy such as whey protein concentrate can help restore structure and juiciness in high-protein formulations. Functional animal protein possesses strong emulsifying and gelling properties, enabling effective stabilisation of water and lipids within the meat matrix. This enhances the cohesiveness and textural integrity of the product. Whereas whey protein concentrate contributes to water-binding and gel formation, helping retain moisture during processing and reduce cooking loss. Together, these functional proteins enable high protein meat applications with desired firmness and structural stability without compromising on juiciness or overall eating quality.

Sodium reduction strategies that support health without losing function

With increasing consumer awareness around cardiovascular health and regulatory pressure on sodium intake, manufacturers are challenged to reduce sodium intake without compromising on product quality. Sodium reduction is a complex challenge as it can result in a decline in both textural properties and characteristic flavour of the product (1). From a sensory perspective, lowering the sodium content in the formulation reduces the overall flavour intensity and umami perception. Functionally, sodium reduction may also result in a softer or less cohesive product due to weakened protein solubilisation and network development.

Effective sodium reduction therefore requires a functional reformulation strategy to balance flavour and functionality to maintain processing performance and sensory acceptance.

Sodium reduced chicken sausage

Our reduced sodium chicken sausage is formulated to deliver up to 50% sodium reduction while preserving the firm bite, juiciness and flavours that consumers expect. Sodium is partially replaced with a potassium blend to maintain the ionic strength for protein extraction and emulsion stability, enabling manufacturers to meet sodium reduction targets without compromising consumer acceptance.
